pumpkin spice muffins


My friend Meg told me about a great recipe for muffins. It's so easy, it should be fool proof. 1 pkg spice cake mix, 1 16oz can of pumpkin and 1/2 cup of water. Mix and put in paper lined muffin cups at 350° for 18 minutes (325° if using dark pans). They are in the oven now. Can't wait for them to be done, the batter tastes delicious. Low calorie, high fiber and only 2 WW points.

I am now trying to think of a great drizzle glaze for the top. Something light so as not to add too many calories. Perhaps a thin powder sugar glaze with finely minced walnuts. Wouldn't take too many walnuts to add flavor and crunch.

So I mixed up about 3T of powdered sugar and 2 T of milk and drizzled it on the 18 cupcakes the recipe made. I minced 3 walnuts and it covered 8 cupcakes. I left some without walnuts to please Sarah.

They are delicious!
